Spinach and Ricotta Gnocchi

Ingredients
Gnocchi
1 cup good quality ricotta
1/2 cup plain flour
1:2 cup finely grated parmesan
1 egg, beaten
Salt and pepper
2 tablespoons finely chopped cooked or 1 block frozen spinach, moisture removed
Plain flour, for bench
Parmesan, to serve
Tomato sauce
1 tablespoon good quality olive oil
2 cloves garlic, grated
400g canned tomatoes
1 tablespoon tomato paste.
Method
The best way to learn to make this is to watch @warrenmendes video in his highlights.
Mix together ingredients.
Divide dough into four. Gently roll out dough on a lightly floured surface into long sausages.
Cut into small pieces.
Meanwhile, cook tomato sauce. Heat oil add garlic cook until golden, add tomatoes and tomato paste simmer for 10-15 mins.
Bring a pan of salted water to a boil then reduce to a simmer, add gnocchi. Cook until they float to the surface then cook for 20 seconds more.
Remove with a slotted spoon.
Serve topped sauce topped with gnocchi and grated Parmesan.
So so good.
